Indian lentil soup (usually referred as Dal in India)

Try this vegan oil free Indian lentil soup (usually referred as Dal in India). It is full of protein and yet so yummy and light on tummy.

Ingredients (2 portions):


1. 1 cup dry red lentils

2. 1 cup dry yellow lentils

3. 2 chopped tomatoes

4. Half medium sized finely chopped onion

5. 2 garlic cloves

6. 1 medium sized chopped green chilly ( add more if you want extra spicy)

7. 1 teaspoon finely chopped ginger

8. 1 teaspoon cumin seeds

9. 1 teaspoon mustard seeds

10. 1 teaspoon turmeric powder

11. Green coriander for topping

12. Salt as per taste

13. 2 teaspoons lime juice for topping



Method:


  • In a pot, set dry lentils to boil in 2.5 cups of water with half teaspoon of turmeeeic powder. Boil until you see lentils have become soft and have started to disintegrate.

  • In the meanwhile, in a big pan dry roast cumin seeds and mustard seeds.

  • When cumin seeds turn brown, add onion, garlic, ginger, chilly and sauté them until onion start to turn brown on a medium flame.

  • Add chopped tomatoes and cook for about 5 minutes on a low flame while keeping the pan covered.

  • Now add the rest half turmeric powder and salt and cook for another 2-3 minutes

  • Next, add the boiled lentils together with the water in the pan. Mix it well and let it cook with the lid on over low flame for 5 minutes.

  • Top it with the green coriander, lime juice and some fresh onions and serve it together with some bread or rice
