I made this Kung Pao Tofu and it was so good. It is very high in protein and perfect for lunch or dinner. You can either have it as starter or just have it as your main meal. I am still drooling about how good it turned out to be.

Ingredients (2 portions):
1. 200 gm tofu
2. 2 tablespoons starch
3. 1 teaspoon black pepper
4. Half cup green coriander
5. Half cup chopped spring onion
6. 1 garlic clove finely chopped
7. 1 teaspoon ginger finely chopped
8. 1 teaspoon Hoisin sauce
9. 1 teaspoon soya sauce
10. 1 teaspoon green chilly sauce
11. Half cup vegetable broth
12. 1 teaspoon vinegar
13. 1 teaspoon tomato ketchup
14. 1 teaspoon sesame seeds (for topping)
Method:
Cut tofu into medium sized cubes and coat them well with starch and black pepper. You might need to add a few drops of water to help with the coating.
Bake the tofu at 200 degree Celsius in a preheated oven for 20 mins, you should see that the outer sides of tofu cubes have turned crispy and golden brown.
While the tofu is getting baked, in a sauce pan add chopped ginger and garlic, and roast them on low flame until golden brown.
Add soya sauce, hoisin sauce and vegetable broth, and mix them well. And, now add rest of the sauces.
Cook it on a high flame and you should see that some water has evaporated and the sauce has thickened.
Now, add spring onions and coriander and mix well for 1 more minute.
Coat the baked tofu well in this sauce and top it with some extra spring onion, green coriander and sesame seeds before serving.
