I made this mango salsa to go with the vegan quesadillas as a starter for some friends and they were so delicious. This recipe is perfect for vegans who want to make something quick and is full of taste. Do give it a try, and give me the feedback.

Ingredients (2 portions):
1. 1 ripen mango
2. Half finely chopped onion
3. 2 finely chopped garlic cloves
4. 2 jalapeños/green chilly
5. Half cup green coriander
6. 1/4 teaspoon salt
7. Half tomato
8. Juice from one lime
Method:
In a blender, mix all the ingredients and blend until you get a coarse consistency like in the picture. Be careful here not to blend it too much, you don't want to create smoothy like consistency.
If you don't like it blended, you can just chop everything finely and mix everything together in a bowl
Serve it together with quesadillas or tortilla chips or any other snacks.
