Spinach burrito

I made this vegan burrito for breakfast and was so delicious. I had it with spinach protein shake. I even made spinach tortilla from the scratch. It is much easier to make tortilla at home than you think. This recipe is perfect for vegans and full of taste. Do give it a try, and give me the feedback.

Ingredients (2 portions):


1. 120 gm spinach

2. 100 gm black beans

3. 100 gm fresh spinach

4. 1 avocado

5. 200 gm mushrooms

6. 10 cherry tomatoes

7. 1 cup whole wheat flour

8. 1/2 cup corn flour

9. 1/2 cup chickpea flour

10. 2 scoops protein powder

11. One cup soy milk

12. Water as required

13. One teaspoon cumin powder

14. One teaspoon coriander poder

15. Some fresh green coriander




Method (don't forget to read tips and tricks under before you start cooking):


Burrito

  • In a blender, mix 60 gm of spinach with half cup of water and blend well

  • In a bowl, mix all flours (whole wheat, corn and chickpea) and add the spinach water from previous step and knead it well and get it to a dough shape. Add more water if required. Let it rest for 5 minutes.

  • In a pan, sauté mushrooms (oil free) until you see that the mushrooms have lost most of their water and have reduced to about half of the original size

  • Chop avocado in thin slices and cherry tomatoes in halves.

  • In a pan, dry roast black beans with cumin powder, coriander powder and some salt for about 3-4 minutes

  • Now sprinkle some flour on the surface, where you plan to roll tortillas. Divide the dough into 4 balls and roll them in whatever tortilla shape you like and cook it on a pan from both sides.

  • Now, serve the freshly made spinach tortilla with sauté mushrooms, black beans, sliced avocado, cherry tomatoes and fresh coriander


Spinach protein shake

  • Add rest of the spinach with milk and protein powder in a blender and get your spinach protein shake.


Tips and tricks:


  • While making tortilla dough, be careful not to add too much water. Add water little by little as per the dough's requirement. You don't want to make it too liquidy.
