Try this Indian spinach tofu curry. It is typically made with Paneer (which is type of Indian cheese) instead of tofu and called as palak paneer. We could call it palak tofu. All plant based and yet so yummy.

Ingredients (2 portions):
150 gm tofu
200 gm spinach
Half onion
2 cloves garlic
1 medium green chilly (add more if you want it more spicy)
1 teaspoon chopped ginger
2 tomatoes
3 tablespoons soy yoghurt
1 teaspoon cumin seeds
1 teaspoon turmeric powder
Salt as per taste
1 teaspoon crushed black pepper
2 teaspoons garam masala
Method:
In a pan, roast cumin seeds until they turn brown and add chopped onions, garlic , ginger and green chilly. Sauté for another 2-4 3 minutes until onion turn golden brown.
Add chopped tomatoes, turmeric powder, salt and pepper and mix well. Cover the pan and sauté it on low flame for 3-5 minutes.
Now add spinach and sauté for another 2 minutes.
Move everything to blender and blend it well until you get a smooth consistency as in the picture and move back to the same pan.
In an another pan, dry roast tofu cubes until they turn brown from all sides.
Toss them to the pan with spinach base.
Add yoghurt and mix it well. Add garam masala and cook for 1 more minute. Top it with some more yoghurt before serving.
