Who doesn’t like a quick 10 mins Tiramisu? It is much easier to make it than you think.

Ingredients (2 portions):
1. 15-16 ladyfinger biscuits/savoiardi
2. 2 teaspoons vanilla extract
3. 250 gm mascarpone (vegans can use sweetened Greek soy yoghurt)
4. 2 large eggs (egg replacer for vegans)
5. 2 teaspoons lemon zest
6. 3 tablespoons maple syrup/date syrup
7. 2 cups of cold espresso
8. 2 tablespoons cocoa (for topping)
9. Blueberries (for topping)
10. Protein powder (optional)
Method:
Add maple syrup with eggs and whisk them until they become frothy
Add lemon zest, mascarpone/vegan options, protein powder and vanilla extract and whip it for 3-5 minutes. You can choose the whisking time depending on how creamy or how solid you like it.
Dip ladyfinger biscuits in the espresso and flip them quickly ( they absorb espresso very quickly)
Now, for layering start with espresso dipped biscuits, next with the whipped mix from step 3, then biscuits and again cream.
Top it with cocoa powder and blueberries and refrigerate for 3-4 hours
