Ingredients (2 portions):
1. 2 ripen banana
2. 1/2 cup oats
3. 1/2 cup flour (white flour/chickpea flour/any flour of your choice)
4. 2 teaspoons of powdered flex seeds mixed in 2 teaspoons of warm water
5. Half cup vegan milk (I used soy milk but you can use oat milk/almond milk/any milk of your choice)
5. 1 teaspoon baking powder
6. 1 scoop protein powder (optional)
7. 2 teaspoons of dark chocolate, 1 teaspoon of cocoa powder, 2 teaspoons of blueberries, 1 teaspoon peanut butter (for topping)
Method:
In a bowl, mesh 2 bananas and add oats, flour, flex seed mix in water, baking powder, optional protein powder and milk. Whisk them and mix them well to get a smooth batter like consistency
Set it aside for 10 mins
Set the pan on a medium flame, brush it with coconut oil and take 2-3 tablespoons of batter in the pan. Cook until brown and flip the side.
Top them with blueberries, cocoa powder, dark chocolate, peanut butter or any topping of your choice and serve them with a coffee.
Tips and tricks:
Don't make too big pancakes, otherwise they might break while flipping.
Use a wider specula to flip the pancakes to make the flipping easier.
