Ingredients (2 portions):

1. 2 ripen banana

2. 1/2 cup oats

3. 1/2 cup flour (white flour/chickpea flour/any flour of your choice)

4. 2 teaspoons of powdered flex seeds mixed in 2 teaspoons of warm water

5. Half cup vegan milk (I used soy milk but you can use oat milk/almond milk/any milk of your choice)

5. 1 teaspoon baking powder

6. 1 scoop protein powder (optional)

7. 2 teaspoons of dark chocolate, 1 teaspoon of cocoa powder, 2 teaspoons of blueberries, 1 teaspoon peanut butter (for topping)

  • In a bowl, mesh 2 bananas and add oats, flour, flex seed mix in water, baking powder, optional protein powder and milk. Whisk them and mix them well to get a smooth batter like consistency

  • Set it aside for 10 mins

  • Set the pan on a medium flame, brush it with coconut oil and take 2-3 tablespoons of batter in the pan. Cook until brown and flip the side.

  • Top them with blueberries, cocoa powder, dark chocolate, peanut butter or any topping of your choice and serve them with a coffee.

Tips and tricks:

  • Don't make too big pancakes, otherwise they might break while flipping.

  • Use a wider specula to flip the pancakes to make the flipping easier.
