Vegan Crepes/Thin Pancakes

I made these vegan crepes for brunch. I topped them with some berries and vegan chocolate syrup and had them with black coffee. They were so yummy and delicious.

Ingredients (3 portions):


1. 1 cup chickpea flour

2. 3 vegan flex seeds eggs (3 teaspoon powdered flex seeds mixed with 4 teaspoons of warm water)

3. 1 cup coconut milk

4. 1/4 teaspoon salt

5. 1 scoop protein powder ( optional)

6. Strawberries, blueberries and chocolate syrup for the topping



Method:


  • Mix all the ingredients in a big bowl and whisk them throughly until you get a smooth batter

  • Lightly brush a flat pan with olive oil and place it in medium flame

  • Take about 5-6 tablespoons of batter and spread it evenly. Cook it until brown, flip it and cook from both sides

  • Top with berries and vegan chocolate syrup and serve.
