Vegan Panna Cotta

Have you ever tried vegan panna cotta? Try this delicious recipe which requires under 10 minutes preparation time and is refined sugar free

Ingredients (4 portions):


1. 1.5 cups soya milk

2. 5 table spoons maple syrup

3. 3.5 teaspoons vegan gelatin

4. 1.5 cups vegan low fat cream

5. 2 teaspoons vanilla extract

6. 2 teaspoons lemon zest

7. Raspberry (for topping)

8. 1 teaspoon cocoa powder (for topping)

9. 1 scoop protein powder


Method:


  • In a pot, mix the milk and gelatin and wait for 5-6 minutes until you see the milk surface a bit wrinkled

  • Now, set the pot on low flame for 2-3 minutes until gelatin is fully dissolved. Milk should not steam, only warm enough to dissolve the gelatin

  • Now, add maple syrup and do the same for 2 more minutes.

  • Now remove it from the stove, and mix it together with flavorings, protein powder and cream for 3-4 minutes until everything is properly mixed.

  • Now, transfer it to pre-greased ramekins/ small cups/small glasses and refrigerate.

  • If you want to serve without unmoulding, 2 hours of refrigeration is enough. If unmoulding on a plate ( as I have done), at least 5-6 hours or even overnight refrigeration is required.
